the lettuce is staring at me

Does anyone else buy healthy food and then just look at it?

I'm trying to develop healthy grocery shopping habits as I acclimate to the stores in the area. I'm shopping in small bits rather than marathon sessions, so I'll have fresh food in the house. I go with at least one recipe on my list, so there's a point to my buying. I start out in the produce section, so I'll have something that qualifies as veggies and fruits when I leave. I also buy a snack, whether it's something sweet (ice cream) or salty (cheese nips), since I know better than to deprive myself of something I'll only eat in single mass quantities if I don't have it occasionally. All in all, I think the shopping is better than it has been in the past.

I'm still not up to snuff on the eating part, though. Take the lettuce. I'm trying to eat more salads so I bought lettuce. I actually like salads, so that shouldn't be a problem. Evidently, it is, however, because it appears I do not like to make salads; the head of lettuce I bought last week is still sitting in the produce drawer, looking at me with its green leafy stare every time I open the door. There's just something about making a salad that is beyond me these days. I want one-stop food, something uncomplicated and quick.

At least I have been cooking rather than eating out or buying frozen meals. The latest dish was a chicken and rice casserole, with sauted mushrooms and onion. Probably not the healthiest thing in the world but better than a bag of chips. Little steps, little steps...

Would you be OK with buying the bagged lettuce? It's more expensive, but you're almost certainly more likely to eat it since you don't have to prepare it.

Yeah- I think Ianqui has the right idea. I always buy bagged lettuce mixes- it makes salad-making sooo much easier. For a good homemade dressing- see this post on the Vegan Lunch Box. And good luck!

On an academic's salary it might hurt, but bagged salads have been my fiance's saving grace, since I hate them. They sell all kinds of mixes from plain iceberg lettuce to spring mix to salad mix with carrot shreds.

I bought the items to make turkey wraps last week, made two and then couldn't eat more than half of one. Just didn't interest me.

Oh, I do the buy food and then stare at it thing all the time. One thing that works for salads is that I wash and prep the lettuce right when I get home (I would still wash the bagged lettuce b/c I never trust people and I also know a couple who got food poisoning from bagged lettuce). My salad spinner is great b/c the lettuce stays fresher longer. Then, I chop veggies a head of time so that making a salad is really just taking a handful of this and a handful of that and putting it together.

I don't mind buying bagged lettuce. I usually get bags of field greens or spinach when the mood strikes but they always go bad before I can eat them, too. I'm lucky if I can get two meals out of them before they get all slimy. Maybe I should make a goal to order salads when I go out to eat?

Yeah, I'm with you. I buy bagged lettuce and bagged shredded cabbage and bagged shredded carrots, all with the best intentions, then I end up throwing most of it out as a soggy mess because I didn't manage to eat it in time. I can't tell you how often this happens to me.

I agree, the bagged lettuce helps me eat more salad. I may give Betty's idea a try and use a salad spinner for a head of lettuce.

The salad spinners are nice, my mom has one. I can't stand iceburg lettuce so I buy red leaf instead. I've learned that I need to make the salad the day I go grocery shopping or it will never happen. Do it after you put away all your groceries, since you're already up and moving. It helps.
