Lunch ideas

Honeybee asked for some lunch ideas, so here are some things I've been making lately. Since I work/write at home most days, I often battle the refrigerator. I'm working harder to make sure I am aware of how much I eat and how nutritious the foods are. (I keep a piece of paper on the kitchen counter and usually log what I consume, at least until dinner time.)

Open-faced Avocado Toast
1 or 2 pieces of toast (I like to use Alavardo St. Bakery b/c it has no sugar and no wheat flour, mostly sprouted whole wheat berries, some wheat gluten, and soy--available at my local market)
half an avocado, sliced and mashed
a couple of slices/chopped fresh tomato
dash of Tabasco
salt and pepper
teaspoon of Hellman's light mayo (all blended together)
top with toasted sesame seeds or flax seeds

In desperation for something fast and easy: Annie's organic mac and cheese (whole wheat)

or
fresh summer tomatoes on toasted bread with mayo, salt and pepper. heaven.
for a treat: Newman's oreos (wheat free, dairy free--they are high in fat b/c of the palm oil, but are delicious dipped in soy milk.)

In the summer, I like cottage cheese and fresh tomato slices. I eat sandwiches a lot when I'm working from home: turkey and cheese, peanut butter and jelly, pimento cheese, tuna salad. I usually keep yogurt in the fridge for when I can't think of anything else to eat.

I guess these aren't super-healthy lunch ideas but one issue for me is portion control. Sandwiches are finite meals; once the sandwich is gone I'm either finished or I have to fix another one, which I won't do out of sheer laziness.

Thanks for taking the time to write those out!

Part of my problem is that I'm super-picky about food, but I figured lunch ideas would be useful for everyone even if I wouldn't like them.

Two big hates: tomatoes and mayo. Still, I can think of a few ways to modify Avacado Toast so that I'd like it!

PB&J with reduced fat peanut butter is a standby, but I'm getting tired of it. Cheese and crackers is good for a snack: I keep a box of reduced fat wheat thins (aka crack) at the office.

In the past I've made wraps with tortillas, sliced turkey, cheese, lettuce and green salsa. I should pick up some of those fixings.
