back in the game (not on the bench)

The March "challenge" has spurred me back into the healthy lifestyle game from where I have been so lazily watching from the sidelines. Today, you see, I weighed myself (which I have been avoiding for a while) - Yikes. Why do I consistently put my education before my health?

No wait, on second thought, don't answer that.

So in the spirit of the new beginnings for Spring, I'm ready to try again. I know I should forgive myself for my failures in the past, but believe me I do - that's really my problem. I want to share things that help me, and in the past (and hopefully in the future) one that really has is myfooddiary.com. I am a lover of all things log-like, but sometimes my obsession with the perfect food/body/exercise log takes away from umm... eating well, my body, and exercising. It also has a lot of forums. I suggest you check it out. At $9/month I can even pull it off on my graduate student budget.

Something else I have discovered this week in search of new and interesting ways to cook things that are 1) not boring, 2) quick, 3) have leftover potential is this little recipe: (I believe at some point I ripped this out of a magazine, which is how it came to be stuffed in my kitchen drawer. I finally tried it this week) Checking the calories its not that bad and its a way to hide veggies, which I often have to do on myself.

Bruschetta Chicken Bake (with Psyc Girl style ammendments)
1 box stovetop (whatever flavor you like)
1 can diced tomatoes
chicken breasts
fat free shredded mozzarella
spinach (My ammendment)
whatever other veggies need to be hidden in your chicken dishes
low fat feta

Very easy prep:
Cut the chicken into bite size bits. Place in bottom of casserole dish. Top with veggies-to-be-hidden (such as my spinach) and mozzarella. In a bowl, mix stovetop with can of tomatoes and liquid from can. Stir until moist. Cover chicken and hidden veggies. Bake until chicken is cooked (my oven took about 30mins at 350) and sprinkle with feta to serve.

There, now by sharing I feel less guilty about meeting none of my goals in February.

Psycgirl: So glad you posted. And I am so glad I decided to use re-commitment as the theme for March.

The recipe sounds great!
