Recipe!

I made this chicken dish this weekend and just HAD to share it. Easy, healthy and minimal cleanup! It's a recipe I've been adapting each time I make it to suit my needs, so feel free to play around with it.

Orange-Soy Glazed Chicken
1 cup freshly squeezed orange juice (I used simply orange juice since I had it on hand)
1/4 cup soy sauce
1/2 cup sugar (or to taste, I used MUCH less, only a few tablespoons)
4 boneless chicken breasts

Set a 1 quart saucepan over medium high heat and add the OJ, soy sauce and sugar. Bring to a boil, lower heat to a simmer and cook until reduced to about 3/4 cup (approximately 20 minutes). Remove from heat and pour over chicken breasts. Refrigerate at least 2 hours.

Remove from fridge and bake (in marinade) for approximately 45 minutes or until chicken is cooked through. I basted every 15 minutes or so just to keep it moist. I made a second batch of the glaze to pour over the meal and just thickened it with a few tablespoons of cornstarch. Serve with rice and broccoli and you have a fantastic meal!
