I don't especially like carrots; I can manage one or two raw slices with some ranch dip but I tend to avoid them as much as possible. Today, however, whilst prowling the grocery store aisles, I decided to buy a bunch of carrots to add to the casserole I'm making tonight that I intend to eat for the rest of the week. Why would I do something like this, you ask? Well,
- they have some of those necessary vitamins and minerals
- they belong the vegetable category, of which I do not eat nearly enough
- they'll add some color, as well as some health, to my casserole of chicken, rice, cheese and almonds
- I had popcorn and ice cream for dinner last night and, no, I was not at the circus

Popcorn and ice cream is not too bad, especially as hot as it is right now!!!!
My guilty pleasure is salsa:
1 small can of whole tomatoes
1 can of rotel
2 cloves of fresh garlic (pressed)
1 roma/plum tomato
1 bunch of green onions, chopped (just the white part)
1 good squirt of lime juice
salt and pepper to taste (I use Everglades seasoning)
cilantro if you like
Mix in food processor to preferred thickness (or not)
I literally eat 1-2 batches a week!! With chips!!! It fills me up and hasn't made me gain weight.
So, so good on lots of stuff (besides chips): baked potatoes and even tuna salad
